view one's following/watching

Please add links so one can see people/projects/organizations one is following/watching. Once I used contact form to ask that for projects but instead of adding link to the interface, they emailed me the link, which isn't as useful.

You might want to take a look at the Github REST API,
which provides all kind of API endpoints you need for such information.

Here's some examples of the features you're looking for...

For checking a user's followers, use the endpoint
https://api.github.com/users/{user}/followers.

List followers of a user (documentation)
Lists the people following the specified user.

For checking a user's following, use the endpoint
https://api.github.com/users/{user}/following.

List the people a user follows (documentation)
Lists the people who the specified user follows.
